WHOLE30 3 INGREDIENT PROTEIN PANCAKES | cooking

 Back from vacation, Whole30 challenge completed (before I left) and I'm back in Toronto now and sticking to my regular routine: working, going to the gym, eating healthy. While I haven't continued my Whole30 challenge as strictly as I was doing in February, I've definitely worked in a lot of the elements into my regular diet. Whole30 left me feeling good about my body, feeling good inside my body (less bloating, more energy and more effective workouts) I would be nuts not to continue it. So I've reduced the amount of carbs I eat, sugar and alcohol. I haven't cut out those items but I've definitely reduced the amount I eat.

 

One thing I have continued is a super healthy breakfast. But eating more protein and less carbs for breakfast I've found myself staying full longer and getting less cravings for sugary foods and carbohydrates. The idea of eating scrambled eggs and a piece of fruit EVERY morning was becoming a little vanilla. So I started whipping up these super easy, super delicious banana protein pancakes. Best part: they are the easiest things so make. If you're on the Whole30 you won't be able to add syup (I don't add syrup anyway because I find they don't need anything - but it's up to you). However, if you find that you do need to add more to them, I suggest a tablespoon of almond butter on the side.

What You Need:

One super ripe banana

2 eggs

Cinnamon or nutmeg

Coconut Oil

 

Directions:

In a blender (I use a Magic Bullet) combine all ingredients and blend! I usually cut the banana into chunks so it blends quicker and easier. I eyeball the amount of cinnamon I use, so you'll just have to add in what you think is a good amount to your test.

Heat up the burner to a medium heat (you may find that you need to reduce the heat half way through

Add a tablespoon of coconut oil and let the oil heat up

Pour the batter into small circles on the burner

Now here's the tricky part: I takes practice with these babies. At first my pancakes were basically in scramble egg format lol. You just have to get an understanding of when the pancake is ready to be flipped. Usually once I see the batter bubble a little I flip it.

They do burn quite easily, so you have to watch them
