I'm on a baking kick and I was in the mood for baking cookies. Bryon requested classic chocolate chip cookies and I had no problem making them. Chocolate chip cookies are probably one of my favourite things to bake and I love trying different recipes. I've literally never experience the same chocolate chip cookie by trying different recipes, so I think it's fun hunting for the perfect recipe.
This one is really great! I think I probably would have added less flour, maybe 1 cup instead. Either way, there were still amazing. Cakey, soft and just ever so chewy. Bryon seemed to enjoy them so my mission was accomplished. I think chocolate chip cookies are comforting because just about everyone has helped their mother bake them as a child and they end up conjuring good memories...the smell of them baking is so recognizable.
While I'm baking I usually listen to music or a pod cast, right now I am obsessed with Limetown. If you have a chance to listen to it, you should. It's fiction, but still really engaging.
Anyway, following the photos is the recipe. I hope you get a chance to bake these.
½ cup of unsalted butter, softened
½ cup of granulated sugar
½ cup of light brown sugar
1 large egg
1 ½ tsp vanilla extract
½ tsp salt
½ tsp baking soda
¾ tsp baking powder
1 2/4 cup all purpose flour
1 cup semi-sweet chocolate chips (I used milk chocolate)
In a large bowl or stand mixer, cream together butter and sugars until light and fluffy. Mix in egg and vanilla, followed by salt, baking soda and baking powder. Mix in flour until fully incorporated and no streaks of flour remain. Stir in chocolate chips. Chill cookie dough until it is thoroughly chilled.
Pre-heat the oven to 350 degrees F. Scoop dough (about 3 tbsp.) about 2-3 inches apart.
Bake for 12-13 minutes, and cool.
