A LITTLE SUGAR | baking

On Saturday night, Bryon worked overnight and I was bored out of my tree. Since a lot of my friends live either across the country, in the US or in other cities, I have to find other ways to enjoy my time alone. Surprisingly, I was single for about 6 years before Bryon and I got together, so it's pretty interesting to see that I'm not overly excited for alone time. You think I would be!

 

Anyway, baking seems to be the answer to my boredom lately. And not that we need any of this at home, I decided to bake simple spring sugar cookies and take them to the hospital for Bry and his colleagues (at 10pm at night might I add).

 

These cookies are great because you can freeze them and decorate them again later. This batch made A LOT based on the cookie cutter size I was using, so I only ended up decorating about 12 of them before I got bored and decided to freeze the rest. I figure I could use them at Easter. This time I did not make my own icing, and I usually do. To be honest, I was disappointed in the icing I used, and I'm not going to mentioned it. The only reason I used it was because it was late and I wasn't interested in whipping up a few bowls of different coloured icing. But no one seemed to notice. Because I was strapped with time, I used pretty purple sprinkles, bronzed pixie dust (it's just fine sugar - Bry was worries it was craft sparkles at first and wondered if I was trying to kill him. I wasn't. ) and a little food colouring. They ended up turning out pretty cute for a lazy job, but I will say that I'm looking forward to decorating the rest of them with my own icing come Easter hahaha. I also added a few drops of pure lemon flavour to the icing, that's totally optional, or you can try other falvours too. 

 

The recipe is after the photos if you're interested. It is a dough that you DON'T have to chill, which is rare for a sugar cookies recipe. I usually use a different one, but again...with regards to timing, I needed to be quick. So this one was great - and B did question whether or not I made them, and the nurses at Toronto General were pretty pumped hahaha.

Ingredents

  • 3 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 cup sugar

  • 2 sticks (salted) butter, cold & cut into small chunks

  • 1 egg

  • 1 tsp vanilla extract

  • zest and juice of 1 lemon

 

instructions

 

  1. Preheat oven to 350F. In a small bowl stir the flour and baking powder together, set aside.

  2. In a large mixing bowl add the sugar and lemon zest. Use your hands to work the zest into the sugar, releasing the oils.

  3. Add the butter, and use an electric mixer to cream until fluffy. Add the egg, vanilla, and lemon juice and mix until creamy and well mixed.

  4. Add the flour mixture and mix on low speed until combined. Dough will be crumbly.

  5. Turn dough onto a floured surface and knead until the dough comes together.

  6. Roll dough to ¼ inch thickness and cut out using cookie cutters. Place cut out cookies on a lined cookie sheet 1-2 inches apart and freeze for 5 minutes before baking.

  7. Bake each batch 10-12 minutes. Allow to cool on the cookie sheet for 5 minutes and then move to a cooling rack.
