What kid didn't love making mudpies?
These mudpies however are the edible kind! Growing up, a neighbour would make these and I just loved them. It took a while for me to find a recipe that that had the same taste...but I found one! I modified it a bit, because I found it needed a little more this and that. But one thing is for sure, they are SO SIMPLE to make. For example, if you're on the hook for a bake sale or an office party - these take hardly any time to make and there's no baking involved - they just need to set in the fridge. Also known by the name macaroons or fiddle diddles...I prefer mudpies because they sound cuter.
Everyone who tried them loved them, and you would think they took so much longer to make. Recipe is below!
2 3/4 cups rolled oats
1 cup shredded coconut (I essentially used a whole bag)
5 tablespoons unsweetened cocoa powder
2 cups sugar
1/2 cup butter
1/2 cup milk
1 tsp vanilla
In a large bowl, combine rolled oats, coconut & cocoa powder. Set aside.
In a saucepan, combine sugar, margarine and milk. Bring to a boil over medium heat. Let boil for 2 minutes (no longer). Remove from heat and stir in vanilla.
Pour oat mixture into the hot margarine mixture and stir until well mixed. Drop by spoonfuls onto a pan and let cool completely
