FRESH SUMMER SALADS | cooking
Last week we had a couple super hot days. This summer hasn't been the greatest, so I was pretty pumped. On a hot day, the last thing I want to do is turn the oven on and make hot food. So I decided to try some super easy and refreshing salads for Bryon and I. I probably wouldn't have made these together for one meal if it wasn't for the fact that I thought it would make a great blog post lol. But i think you could serve these with roasted chicken served cold and maybe another cold side. The great thing about both of these is that you can season them however you like and make your own version of them.
Both are Bryon approved and take very little time to make, but pack a lot of flavour!
Citrus Avocado Salad
One red grapefruit
One ripe avocado
Mexican Spice (to your taste)
Peel the grapefruit and remove as much pith as possible (the white flesh under the peel)
Slice the grapefruit horizonally to the core into slices as thick as you wish, and cut those slices in half. Remove any seeds. Place them on serving plate
Cut the avocado in slices and slice them into halves. Place on the plate - however you would like the presentation. I sprinkled the avocado with Mexican spice, but you could also go for cayenne if you wanted some extra heat. I think this would taste great with a little coriander sprinkled all around. But I know there's a lot of coriander haters out there.
Watermelon Mint and Feta Salad
Serves...as many as you want!
Watermelon cut into chunks
Mint (or basil!)
Feta cheese (I used cubed feta, but feel free to crumble!)
(You could also add spice and salt to make it more savory)
Literally, all you need to do is combine the ingredients above! Use as much as you need based on how many people you are serving. It's such a simple salad and can be modified in many different ways. I personally find the mint version super refreshing on a hot summer day, but I think basil would change the direction completely and make it a whole new salad. So why not try both versions!
