Every time I go out at lunch on the hunt for a healthy snack, I search the shelves for peanut-free energy balls / bites that will satisfy my sweet-tooth craving. I NEVER find them! Not to mention, the store-bought ones are SO expensive for what it costs to make them on your own - roughly around $5-$6 for a package of 1-2. I finally decided to take things into my own hands and learn how to make them on my own. Surprisingly, it's super easy, takes hardly any effort OR ingredients and it doesn't take hours. I'm sort of on a health kick right now, and I'm trying to fill our place with healthy snacks. Snacking is sort of my problem, so I figured with a few tasty and easy to grab items hanging around that weren't full of sugar, my snacking problem wouldn't be as much of a problem anymore.
Side note: I am going to be posting fashion stuff soon. It's finally warm in Toronto and comfortable enough to shoot outfits outside. Bryon and I are hoping to do some this weekend :)
Back to the bites! I'm allergic to peanuts and some nuts, which makes finding pre-packaged protein snacks super tough and nearly impossible. Making them myself is the safest thing for me to do. These are not school safe, but you could probably make them school safe by substituting the nut butter for soy butter (soy really hurts my stomach so I avoid it). If you can find a school-safe sunflower butter as well, you might be able to get away with that. I think that would work best for kids who are obsessed with peanut butter because it has a strong nutty taste. I used coconut-almond butter for these ones. Luckily, I'm not allergic to either of those! Now, this recipe is 4-ingredients, but if you want to add some fibre and extra energy, I rolled some of mine in hemp seeds. It will add to the nuttiness flavour too! These taste like a chocolate truffle. I mean, a little more dry than an actual truffle, but I was shocked at how delicious they are. They're going to be perfect for the little lull between 2-3pm where all you want to do is eat a sweet treat to get your through the rest of the day.

4-Ingredient Chocolate Nut Butter Bites
1 cup creamy almond butter (or any nut butter / sunflower butter of your choice)
1/3 cup pure maple syrup
1/3 cup coconut flour
¼ cup unsweetened cocoa powder
Line a baking sheet with parchment paper and clear some space in your freezer for the sheet to fit.
In a large bowl, mix butter, maple syrup, coconut flour, cocoa powder. The mixture will become a sort of stiff consistency, but keep mixing and ‘smushing’ the ingredients until they are all blended.
Scoop out the mixture with a spoon and roll into balls. It’s up to you to decide how large / small you would like them to be. I like them sort of small, because they are quite heavy and sweet. But it’s up to you. Feel free to roll them in coconut flakes or hemp seeds. They taste good on their own too! Place each ball on the sheet. Pop them in the freezer for about 20-30 mins and then they’re good to go!
I keep mine in an air-tight container in the fridge. They’ll get a little chalkier after 3 or so days, but they’re still good to eat. They’re good for about 3 weeks, but it’s doubtful they’ll actually last that long ;)
